This week on Kitchen Caravan, we celebrate Spring with some Mediterranean flaky pastries.  Bourek, Burek, Borek- they are all variations on the flaky pastry layered with cheese, spinach, and sometimes meat fillings that are so popular in the lands of the former Ottoman Empire.  You can fill them with the fresh, invigorating greens of Spring, for a new take on a "Spring" roll.  We encourage you to be creative and find your own favorite fillings.

You might have had a delicious feta and spinach pie called Spanakopita in a Greek Restaurant, or Borek in a Turkish cafe.  We love making these delicious flaky pastries at home, using fresh greens from the market.  We added Dandelion greens to the traditional spinach, to give it some extra Spring time oomph.  It takes a bit of getting used to the phyllo and yufka doughs when you start learning how to make these, but once you get the hand of it,  you will be rolling up this Mediterranean pies all the time.
