Agar agar is a type of sea vegetable that is calorie free and full of fiber. It can be used to make light puddings, thicken soups and stews, and make vegetarian gelatins. It is utilized quite frequently by Spanish chefs who love molecular gastronomy. In order to activate its gelatin forming properties you must dissolve it in hot liquid. Once it starts to cool, it holds its shape, and usually does not need even 20 minutes to set. It does not even need to be refrigerated! What is cool about agar is that it allows us to not only enjoy vegetarian gelatins that are cooling and refreshing, but it also can be used for savory creations as well.
You can find packets of agar flakes in natural food stores and organic supermarkets next to other sea vegetables (nori, kombu, dulse, arame, wakame, etc).
